 Savoury Pumpkin Pie

This is what's for dinner tonight! Hopefully it'll be as good as it sounds. I'll probably substitute cheddar cheese, since I already have it at home. Smile

450g/1lb pumpkin
salt and pepper
50g/2oz butter
1 large onion, sliced
225g/8oz potatoes
100g/4oz cooked peas
100g/4oz Cheshire cheese, crumbled
1 packet (368g/13oz) puff pastry
beaten egg to glaze

Serves 6-8.

Directions:

Peel the pumpkin and cut the flesh into cubes, discarding the seeds. Cook the cubes in simmering salted water for 15 minutes. Drain thoroughly.
Melt the butter in a pan and gently cook the onion until browned. Mix with the pumpkin.
Dice and cook the potatoes; add them to the pumpkin with the peas, cheese and seasoning.
Roll out pastry thinly and cut out 2 circles - one 25cm/10in in diameter, the other 30cm/12in in diameter. Place the smaller circle on a greased baking tray.
Pile the filling on the pastry, leaving a 1cm/half-inch border. Brush the border with beaten egg, then top with the second pastry circle. Seal the edges and decorate with pastry trimmings.
Glaze and bake in a hot oven (220c/425f/Gas 7) for 15 minutes, then reduce the oven temperature to moderately hot (190c/375f/Gas 5) and bake for a further 15 minutes.
